Hawawashi

Ingredients:

For the Filling:

  • 225g ground beef or lamb
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red or green bell pepper, finely chopped
  • 30g tomato paste
  • 5g ground cumin
  • 5g ground coriander
  • 2.5g chili powder (adjust to your spice preference)
  • Salt and pepper to taste

For the Dough:

    • 250g all-purpose flour
    • 5g salt
    • 5g sugar
    • 30g vegetable oil
    • 120ml warm water

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine the flour, salt, and sugar.
    • Add the vegetable oil and mix until the mixture resembles coarse crumbs.
    • Gradually add warm water and knead the dough until it’s smooth and elastic, about 5-7 minutes.
    • Cover the dough and let it rest for 30 minutes.
  2. Prepare the Filling:
    • In a skillet, sauté the chopped onions until they become translucent.
    • Add the minced garlic and bell pepper, and cook for a few more minutes until they soften.
    • Add the ground meat and cook until browned, breaking it up with a spoon.
    • Stir in the tomato paste, cumin, coriander, chili powder, salt, and pepper.
    • Cook the filling for an additional 5-7 minutes, ensuring it’s well-mixed and flavorful. Remove it from heat and let it cool.
  3. Assemble and Bake:
    • Preheat your oven to 400°F (200°C).
    • Divide the dough into equal portions and roll them into thin, round disks (similar to tortilla size).
    • Place a generous portion of the meat filling in the center of each dough round.
    • Fold the dough over the filling to create a half-moon shape and crimp the edges to seal.
    • Place the hawawshi on a baking sheet.
    • Bake in the preheated oven for 20-25 minutes, or until the dough is golden brown and crispy.
  4. Serve:
    • Let the hawawshi cool for a few minutes before slicing it into wedges.
    • Serve with your favorite side salad, tahini sauce, or yogurt dip.
